A Vegan Father's Day Dinner/BBQ

These are some simple, cheap, and very easy recipes that are great for dinner and a BBQ. With Father's Day coming up, a simple dinner or BBQ in the afternoon for family or guests would be a great way to spice up the day. Not only are these some great recipes alone, but they are vegan. These recipes include some things as simple as store-bought packages or homemade dishes. They can be served to any guest so it can allow for more variety! Simple Dinner and BBQ Tips

  1. Clean your grill before beginning. Doing so can give your food more flavor than if it were to blend in with previous flavors. An easier way to clean it is scraping off the food when the grill is hot.

  2. Don't mess with the food on the grill. By squishing, moving, or picking with it, the flavor tends to come out as well. If it is stuck to the grill, allow it to cook for about two more minutes then try again.

  3. Allow your food to cool down. The flavor is more vibrant and noticeable if you allow the heat the settle in the dish. Just leave it for about 10 minutes.

  4. Invest in a nonstick BBQ grill mat. It makes the cleanup much easier and it makes it easier to flip the food.

  5. Learn to Parcook. Just cooking an item halfway and then finishing it later during a better time. Doing this leaves the food moist and keeps you from having to reheat your food.

  6. Always read a recipe through. I know this is a basic tip, but trust me when I say it will make the process much quicker. You won't have to check multiple times for measurements or watch/read it multiple times. Also if you want to wing it, it gives you a good basis as to where to start.

 

Cheap Dinner Recipes

  1. Veggie Kebabs

Ingredients  1 tbsp fresh parsley 1 garlic clove 6 cut green pepper 6 cherry tomatoes 6 button mushrooms

Method 1. Preheat stove to high 2. Combine parsley, oil, garlic, salt and vegetables 3. Thread vegetables onto 4 skewers 4. Grill, turning once until tender and crisp, 6-10 mins



 

2. Sesame Stir Fry


Ingredients

1 cup mushrooms (I prefer shiitake)

3/4 cup green pepper

1/4 cup onion

1/2 cup broccoli

1 garlic clove

1 tsp soy sauce

1 tsp sesame seeds


Method

1. Add mushrooms, broccoli, onion and pepper to a frying pan and cook until softened on medium-high heat

2. Add soy sauce and garlic and stir

3. Transfer to a bowl and top with sesame seeds

4. Can serve with white or brown rice


I add avocado for some extra flavor!


 

3. Potato Curry


Ingredients

half or whole onion (whichever prefered)

2 large potatoes

1/2 diced eggplant

2 cups mushrooms

1 tbsp coriander

1 tbsp curry paste

1/4 cup vegetable stock

2/5 cup light coconut milk


Method

1. Add onion and potato to pan and cook for 10 minutes until potatoes start to soften

2. Add eggplant and mushrooms and cook for a few more minutes

3. Stir in curry paste, stock and coconut milk and bring to boil

4. Simmer for 10-15 minutes until potato tender

5. Serve with basmati or pilau rice

Easy BBQ Recipes

  1. BBQ Chickpeas

Ingredients

2 cans of chickpeas

any seasoning (recommend garlic powder, salt, and chili powder)

2 avocados

tortillas or rice


either on a skillet or using a grill mat


Method

1. place chickpeas on grill and leave to cook for about 10 minutes

2. begin seasoning and stirring

3. while the chickpeas are cooling down, cut up avocado and season or make guac. (my preference)

4. place both in a tortilla or place on rice

 

2. Tofu Skewers


Ingredients

1 tofu block

1 cup soy sauce

seasoning

1 green onion

10 small tomatoes

1 garlic clove

2 tbsp oil


1. allow the diced tofu to marinate in the soy sauce, and oil for 20 minutes after you press out excess water

2. on the grill begin cooking the tofu and veggies for 20 minutes, flipping halfway

3. afterwards, place food on skewers as desired

4. continue grilling if desired if you prefer it more crispy
